James Beard Award-winning chef Michael Solomonov and restaurateur Steve Cook, founders of the CookNSolo hospitality group (known for Philadelphia's Zahav), are opening Aviv, a highly anticipated Israeli restaurant in Miami's 1 Hotel South Beach. Aviv, slated to open on March 14th, 2025, offers a menu showcasing the flavors of Tel Aviv with a modern Miami twist. Dishes include haloumi baklava, pompano with sea bean tzatziki, Yemenite flatbread with hummus, and skewered ribeye. The restaurant features an open kitchen, indoor and outdoor seating, a private dining room, and a bar/lounge with a curated wine list featuring Israeli, Lebanese, and Eastern Mediterranean wines. This isn't CookNSolo's first foray into Miami; they previously opened Federal Donuts and Dizengoff in Wynwood in 2017, closing them in 2018 due to construction. The relationship with 1 Hotel South Beach, forged during a successful Zahav pop-up during Art Basel in 2018, led to the decision to bring Aviv to Miami.
